From the roaster

Our first year working with Manuel Dota marks a continuation of our very small but compelling project in southern Ecuador. As always, the selection is very, very small, but we hope the size of these lots will grow with time. In the cup we find a classic Sidra profile of dragon fruit, eucalyptus, and stone fruit.

Context

The 2026 Manuel Dota from Ecuador, roasted by Sey Coffee, offers a compelling look at the potential of the Sidra varietal. Produced by Manuel Dota, this lot showcases a distinct profile characterized by notes of dragon fruit, eucalyptus, and stone fruit. While Sidra is often celebrated for its complex, layered acidity and refined sweetness, the specific expression of these traits can vary significantly based on processing and terroir.

When evaluating such nuanced profiles, tasters often find it helpful to reference the flavor wheel to better categorize the interplay between the bright, tropical fruit tones and the cooling, herbal qualities present in the cup. This coffee serves as a sophisticated example of how careful cultivation and roasting can highlight the unique characteristics of Ecuadorian production. By focusing on the clarity of these specific notes, the roaster invites a deeper exploration of how individual varietals contribute to the broader landscape of specialty coffee.
