Tasting Notes: Red Apple, Italian Plum
Roaster's Notes: Nohora Pillimue is a coffee grower who has worked for more than 19 years growing coffee. As a representative of the farm, she attends training on coffee. Nohora’s family consists of her husband Fredy and her daughter, who attends school at monserrate. Fredy, her husband is a member of PROAGROMIL Group and Nohora Pillimue who manages the farm. El Carmen farm is 3 hectares in size. The farm primarily grows Tabi and Castillo varieties of coffee. It is located in La Mesa village. The coffee harvest occurs in May and June, and October and November are known as fly crop, but these are being affected by climate change. For the harvest of the coffee, it depends on labor from the area, neighbors, and relatives. This process is carried out every 20 days, when they collect the grains at the optimal maturity stage. The collected coffee is deposited in the hopper and left overnight until it is pulped with the coffee collected the next day. It is then fermented for 24 hours and washed. The farm has a drying area. Coffee can be dried in approximately 3 to 5 weeks depending on the weather. The farm makes its own fertilizer through its pulp wells.
