Brazil Capim Seco
Roasted by Vigilante Coffee
Full-bodied Brazilian coffee from high-altitude Carmo de Minas with balanced acidity.

From the roaster
The Carmo de Minas micro region, with fertile lands and rugged terrain, has gorgeous coffee plantations cultivated at high altitudes that vary between 900 and 1,500 meters. Although sunny weather prevails, temperatures are mild and rainfall is distributed uniformly over the year. This exceptional terroir is the result of the perfect natural features in combination with careful coffee husbandry practices carried out with efficiency and devotion by the Fazenda Sertao team. Coffee from this region is known for its full body and medium-to-high acidity. The region’s economy is based on agriculture and coffee is responsible for providing more than half the income and jobs.

Context
Vigilante Coffee has sourced this natural-processed lot from Fazenda Sertao in Brazil's Carmo de Minas region, grown at 1100–1350 meters altitude. The Yellow Bourbon varietal is known for balanced sweetness and clarity, while natural processing typically imparts heavier fruit-forward and fermented character to coffees. Here, that approach yields roaster notes emphasizing milk chocolate and juicy notes alongside nuttier, buttery elements—a profile that balances the inherent sweetness of the varietal with the deeper body that natural processing encourages. The described lingering finish suggests complexity worth exploring across brewing methods.
