From the roaster

We have developed this blend of dark roast coffees that include both Naturally processed coffees as well as Washed processed coffees from Africa, Indonesia and South America.

The strawberry and black cherry like flavors of the Naturals combine with the chocolaty overtones of South America. Combining those with the bold bodied coffees from Sumatra results in an interesting combination that make this a truly great dark roast coffee.

This blend is Zoka's #3 top seller.

The Name Tatoosh comes from the Tatoosh Mountain Range in Mount Rainier National Park in Washington State. The Native American name means Nourishing Beast and was one of our early blends created in our first store near Green Lake.

Zoka Coffee

Context

Zoka Coffee presents Tatoosh as a dual-process offering—available in both washed and natural versions. The roaster identifies strawberry and black cherry as the coffee's signature fruit-forward characteristics, balanced by chocolaty undertones. This combination suggests a coffee positioned between brightness and body, with the processing method choice offering flexibility in how those flavors develop. Understanding how washed and natural processing shape final flavor profiles can help clarify what to expect from each iteration. Whether you're drawn to the cleaner sweetness typically associated with washed coffees or the fuller fruit expression natural processing tends to emphasize, Tatoosh appears designed to showcase berry-driven character alongside deeper, more grounded notes. Refer to the flavor wheel to precisely locate these descriptors within your own tasting experience.
