Natural processing allows the fruit character of Leonid Ramirez’s coffee to shine at full volume. Ripe cherries are carefully dried whole, slowly concentrating sweetness and building rich, layered flavour in the cup. From his farm in the mountains of Génova, Quindío, Leonid continues to refine his approach to processing with each harvest. Over the eight years we’ve worked together, his coffees have shown remarkable year on year improvement as both farming and fermentation techniques evolve. This natural lot is bold, fruit driven and deeply satisfying. In the cup, expect decadent notes of black cherry, rum and raisin, with a lively strawberry sweetness.

Context

Produced by Leonid Ramirez in the Génova region of Quindío, this Colombian offering showcases the distinct profile often associated with the Natural processing method. While natural-processed coffees frequently exhibit heavier fruit-forward characteristics and increased sweetness due to the cherry drying intact around the bean, this specific lot from Five Senses highlights a complex interplay of black cherry, rum and raisin, and strawberry.

Grown within the diverse landscapes of Colombia, this coffee serves as an excellent case study for those exploring how regional terroir and post-harvest techniques influence the final cup. To better understand the nuances of these specific tasting notes, we recommend referencing the flavor wheel to identify the underlying acidity and sugar browning compounds present in the roast. Whether you are a seasoned enthusiast or a curious newcomer, this selection provides a clear window into the meticulous work of producers like Leonid Ramirez.
