From the roaster

Context

Produced by Gabriel and Elisa Lamounier in the Santo Antônio do Amparo region of Minas Gerais, this Brasilien Filter offering from 19grams showcases the distinct potential of the Pink Bourbon varietal. Grown at 1100 masl, the coffee undergoes a specialized double fermentation process with yeast, a technique that often pushes the boundaries of traditional cup profiles. While standard washed coffees are known for their clean acidity, experimental processing methods like this one are frequently employed to amplify specific aromatic compounds, resulting in the bright lemon, juicy melon, and floral hibiscus notes identified by the roaster.

When evaluating such complex profiles, it is helpful to reference a flavor wheel to categorize the interplay between the delicate floral top notes and the fruit-forward sweetness. This lot highlights the innovative spirit of Brazilian producers who are increasingly experimenting with controlled fermentation to highlight the unique characteristics inherent in high-quality cultivars.
