Description

This washed lot with a day and a half of pre-fermentation shows depth and precision at the same time, harnessing armonas of peach and other yellow stone fruit that lead to flavours of jasmine flowers, bergamot orange and sweet nectar. Context

Guatemala has long been recognized for producing balanced, high-quality beans, particularly from regions like Guatemala Antigua. This specific offering, Guatemala La Garita, is sourced by 49th Parallel Coffee Roasters and features the Bourbon varietal. Known for its classic profile, Bourbon is often celebrated for its inherent sweetness and complexity. By utilizing a washed process, the producers emphasize the bean's inherent clarity, allowing the delicate notes of jasmine, nectar, peach, and bergamot orange to shine through in the cup.

When evaluating such nuanced profiles, it is helpful to reference a flavor wheel to better identify the interplay between floral aromatics and stone fruit sweetness. While washed coffees are generally prized for their clean acidity and bright, transparent character, the specific expression of these traits is deeply influenced by the unique terroir of the Guatemalan landscape. This selection offers a refined look at how traditional processing methods can highlight the elegant characteristics of a well-cultivated Bourbon crop.
