Las Lajas
Roasted by Cartwheel Coffee
Oscar and Francisca Chacón run this family farm, which is known for pioneering honey and natural process specialty coffee in Costa Rica.

From the roaster
Oscar and Francisca Chacón inherited this family farm from their grandparents and is currently run by 6 brothers and sisters and their mother. This couple is one of the first coffee growing families in Costa Rica to produce Honey and Natural Process specialty coffee, following an earthquake in 2008, wide-spread electricity/water shortages lead them to take inspiration from African processes - building raised beds for drying, which led to new ways of processing their coffee. Through experimentation, these innovative processing led to the well-sought-after honey lots that Costa Rica is renowned for.

Context
Produced by Oscar and Francisca Chacón, this Las Lajas lot represents the meticulous craftsmanship synonymous with high-quality production in Costa Rica. As a cornerstone of the specialty movement, the Chacón family is widely recognized for their pioneering work in processing techniques, which often influence the final cup profile by highlighting the inherent characteristics of the cherry. When evaluating such distinct offerings, it is helpful to reference the flavor wheel to better identify the nuanced acidity and sweetness that define these specific harvests.
This particular selection is brought to market by Cartwheel Coffee, a roaster dedicated to showcasing the clarity and potential of their sourcing partners. While processing methods like the ones employed at Las Lajas can often impart heavier fruit notes or syrupy textures, the final experience remains a testament to the specific terroir and the careful post-harvest management practiced by the producers.
