Coffee Details

Mr. Morales' farm is located high in the mountains of our favorite growing region of Nariño, Colombia. Besides the fantastic, extremely high elevation (2,100M!), Jorge picks and processes his coffee with care, fully washing and fermenting for 36 hours, then drying the coffee on raised beds for 12 days. The result is a small, beautiful lot of coffee that we are grateful to be able to offer you.

Context

Produced by Jorge Morales in the high-altitude terrain of Colombia · Nariño, this lot represents the meticulous standards maintained by Case Coffee Roasters. Grown at 2100 masl, the coffee undergoes a washed process, a method typically employed to highlight the inherent clarity and acidity of the bean. While washed coffees are often celebrated for their clean, vibrant profiles, the specific character of this harvest leans into a nuanced sweetness, featuring notes of strawberry, nectarine, caramel, and sweet cream.

When evaluating such distinct flavor profiles, it is helpful to reference the flavor wheel to better categorize the interplay between fruit-forward acidity and creamy, sugar-browning undertones. By focusing on the specific conditions of the Nariño region and the precision of the washing process, this selection offers a clear expression of the producer's craft, balancing delicate stone fruit qualities with a rich, dessert-like finish that remains consistent across the cup.
