From the roaster

The Ixban is the perfect, cozy fall coffee with notes of plum, baked pear and Almond Joy. It's rich and balanced, with a bit of acidity that we simply love!

Coffee Details

This is our third year purchasing this lovely, small-producer blend from the Huehuetenango growing region of northern Guatemala. Located near the border of Chiapas, Mexico, Ixban is an intentional blend of several very small farms that blend their coffees together to create a unique micro-lot. We especially love the complexity that comes from blending several neighboring farms together. For example, one farm might have a slightly higher elevation, more shade or different soil, all contributing something unique to this coffee and fetching a higher price for all involved.

Context

Sourced from the rugged highlands of Guatemala · Huehuetenango, the Guatemala Ixban represents a distinct expression of its origin. This selection, roasted by Case Coffee Roasters, highlights the complex profile often associated with this renowned coffee-growing region. In the cup, the coffee presents a nuanced interplay of stone fruit and confectionary sweetness, characterized by notes of plum, baked pear, and the distinct coconut-chocolate profile of an Almond Joy.

When evaluating such specific flavor profiles, it is helpful to reference the flavor wheel to better categorize the underlying acidity and sweetness. While every lot is unique, coffees from this region are frequently celebrated for their balanced structure and depth. By focusing on the interplay between these fruit-forward and dessert-like qualities, this offering provides a clear window into the meticulous processing and careful roasting standards maintained by the team at Case Coffee Roasters.
