From the roaster

This juicy, tropical-fruit laden offering comes from producer Anibal Chavez. This is our first year working with Anibal, and we are extremely impressed by the quality and sweetness of this coffee. Strawberry gummy, papaya and ripe mango fill the cup, with a rich, sugary toffee sweetness. Balanced and rich, this coffee blows our mind as both drip and espresso.

Anibal learned about coffee production at a very young age because his father had been a coffee farmer for many years. When he was 18 years old, his father gave him property he now has. At first was very excited to be an independent producer, but due to the bad prices of conventional coffee, he was discouraged, leaving the farm in 2008. About five years ago he learned about specialty coffee. He saw that his neighbors were selling their coffee very well so they encouraged him to recover the farm because it had potential. He started working on the farm and rehabilitated the old plants and since 2017 he has been preparing specialty coffee micro-lots.

We roast and ship on Monday, Wednesday, and Friday. All orders placed before 10AM ship that day.

Context

Produced by Anibal Chavez, this Honduras selection represents the meticulous work of a dedicated producer in a country increasingly recognized for its diverse micro-climates. When exploring coffees from Honduras, enthusiasts often look for the balance between vibrant acidity and deep, caramelized sweetness that the region is known for. This specific lot, roasted by Case Coffee Roasters, highlights a profile defined by strawberry gummy, papaya, ripe mango, and sugary toffee.

To better understand how these distinct fruit and confectionary characteristics fit into the broader spectrum of coffee quality, it is helpful to reference the flavor wheel. While tropical fruit notes are often associated with specific processing methods, the unique terroir of Chavez’s farm provides a distinct canvas for these flavors to emerge. This coffee serves as an excellent example of the complexity achievable through careful cultivation, offering a bright, fruit-forward experience that remains grounded by a rich, sugary finish.
