This lot is sourced from 20 carefully selected producers in the Chericho kebele of Arbegona. These producers were identified through Testi Specialty Coffee’s Premium Cherry Selection program, which recognises consistent delivery of high quality, well managed cherry.

Cherry selection begins at the farm level, with producers incentivised through premium pricing to deliver optimally ripe fruit. At Yaye washing station, intake protocols are highly selective, with additional sorting and floatation used to standardise quality prior to processing.

Cherries are pulped and fermented in clean water for 48 hours, with close monitoring of fermentation progress and water quality. The parchment is then washed and density graded through channels before being transferred to raised drying beds. Drying occurs under parabolic shade over approximately 21 days, with careful control of layer depth, turning frequency, and airflow to ensure gradual and even moisture reduction.

Washed coffees typically emphasize clarity and brightness, and this lot reflects that profile through its citrus and floral character. The roaster identifies delicate, sweet notes—a combination common to many Ethiopian origins, which are prized for their complex aromatics and refined acidity. The espresso format allows concentrated expression of these lighter, more nuanced characteristics.
