The Peterson family are the owners and operators of Hacienda La Esmeralda in Boquete, and their history, and long-term commitment to quality coffee is what widely credits them as putting Gesha on the global map. high altitude terroir and meticulous farming turn every microlot into a benchmark of elegance.

The Petersons helped redefine what coffee could taste like and their continued success keeps Hacienda La Esmeralda centred within the specialty coffee industry.

Hacienda La Esmeralda’s Geshas’ have repeatedly won Best of Panama in both washed and natural categories, and their auction prices climbed steadily, reinforcing Panama’s reputation as a source of ultra premium coffee. Their story underpins the modern idea of specialty coffee as a luxury product.

Trapiche 7FB comes from the famed Canas Verdes section above Boquete, which sits at around 1,600 masl. Cool nights, steady cloud cover, and volcanic soils slow cherry maturation and intensify aromatics, giving Gesha its signature perfume and clarity.

The “7FB” code reflects Esmeralda’s precise post‑harvest protocol: a later selective pick; pass 7, from the same block, followed by cool, controlled fermentation and careful drying. Cherries are hand picked at peak ripeness and transported to the Palmira mill, where they are depulped the same day and fermented in a low temperature room to build sweetness and structure. The parchment is then slow dried on concrete patios and finished on raised beds over two weeks, allowing sugars to concentrate while preserving floral brightness; delivering Esmeralda’s hallmark elegance.
