From the roaster

Pablo Cordoba is an exceptional farmer from Nariño, Colombia, who produces some of the best Colombian coffee we source each year. He has become a key partner in our Santafé sourcing, inspiring his neighbors to improve quality and coordinating the delivery of the community's coffee to our export partner, Toldopamba. These efforts have connected many in Santafé with the quality premiums Toldopamba offers for exceptional coffee. This year, Cordoba’s coffee tastes like a complex dark chocolate, layered with deep fruit tones akin to dried fig and black cherry.

Produced by Pablo Cordoba in the Nariño region of Colombia, this offering highlights the distinct character of high-elevation coffee cultivation. Coffees from this specific department are frequently celebrated for their vibrant acidity and complex profiles, often balancing deep sweetness with refined structure. When evaluating such profiles, roasters like Counter Culture Coffee focus on highlighting the inherent qualities of the harvest, which in this instance presents notes of dark chocolate, dried fig, and black cherry.

To better understand how these specific descriptors fit into the broader spectrum of coffee quality, it is helpful to reference the flavor wheel. While individual lots vary based on processing and terroir, the combination of stone fruit and cocoa notes often points toward a well-developed roast profile designed to emphasize body and depth.
