From the roaster

Hallow is back this season with tasting notes like a trick-or-treat bag.

This year's blend consists of a sweet, washed Guatemalan lot, a fruity natural Sidama from Ethiopia and a zesty Costa Rican coffee. A foundation of apple, caramel, and milk chocolate pairs well with Sidama's ripe blueberry and a honeyed sweetness. The citrus from Costa Rica brings it together making flavors that remind us of caramel apple and sugary candy corn sweetness.

A drip pot or pourover keeps the fruit-forward notes bright and the sweetness clean. A French Press or Aeropress leans into the caramel and chocolate, and holds up well to a splash of milk on cold mornings. Hallow only sticks around while the jack-o'-lanterns are out, so grab a bag this Fall!

Context

Hallow is a unique blend from Firelight Coffee that draws its character from three distinct origins: Huehuetenango, Guatemala; Sidama, Ethiopia; and Tarrazu, Costa Rica. By combining both washed and natural processing methods, this coffee achieves a complex profile that balances the crisp acidity often found in washed lots with the deeper, fruit-forward sweetness typical of natural-processed beans. To better understand how these techniques influence the final cup, you can explore our processing methods explainer.

The resulting cup features notes of caramel apple, candy corn, and blueberry. These flavors span a wide spectrum of the flavor wheel, moving from sugary, confection-like sweetness to bright, orchard-fruit acidity. Grown at elevations ranging from 1600 to 2200 masl, this blend showcases the diverse terroir of its constituent regions. Whether you are looking for the clarity of a high-altitude washed coffee or the jammy intensity of a natural, Hallow offers a multifaceted experience that highlights the roaster's approach to blending.
