Luz Helena Salazar - Colombia
Roasted by Foundry Coffee Roasters
Rare varietal natural processed Colombian coffee with exotic floral and star anise notes.

From the roaster
“This one is an absolute flavour bomb. A really great example of what happens when you put rare varietals and highly skilled farmers together.” Prepare yourselves people, you’re in for an experience. Natural processed coffee is often on the wild side as you probably know, but this one is on another level.
In the cup, there’s a lot going on. Big exotic floral notes dominate however you brew and you may also find a lovely star anise flavour running through. The lime acidity cuts through to provide some clarity and zing and there’s also a subtle, almost medicinal cherry balsam not e in there too.
Make no mistake, this is intensely wild espresso and if that's your thing, you’re going to love it. Add milk, and things calm down a fair bit and syrupy sweetness dominates. We’ve been loving this coffee the most as filter though. Every brew seems to bring something new. A real top drawer lot this one. Enjoy.

Context
Luz Helena Salazar's natural-processed coffee represents Colombia's diverse microclimatic potential. Sourced directly from producer Luz Helena Salazar, this lot showcases the characteristic complexity that natural processing brings to Colombian beans—the extended fruit contact imparting layers of sweetness and depth. Foundry Coffee Roasters identifies exotic florals and star anise aromatics alongside bright lime acidity, balanced by cherry balsam notes and syrupy body. This combination of bright, spiced florality with deeper fruit-forward sweetness demonstrates why natural processing remains compelling for specialty producers in Colombia. The interplay between acidity and syrupy mouthfeel invites exploration across different brewing methods and temperatures to highlight specific dimensions of the cup.
