Ethiopia Shakiso Wessi Station Natural

Located in the heart of Ethiopia's Guji region, Shakiso is known for its mining and coffee production. We've initiated the production of a unique all-female-produced coffee sourced from the Shakiso and its surrounding Kebeles. With approximately 30 female producers, this coffee undergoes a special drying process within the fruit, resulting in a balanced cup profile with prominent fruit notes. We've partnered with Sookoo to bring you the product of their hard work, and we publish all prices paid to them, which you can find below.

Onyx Coffee Lab is known for sourcing with precision, and this lot arrives from the Guji zone of Ethiopia — a highland region widely regarded as one of the country's most compelling origins for specialty coffee. Guji's combination of elevation, heirloom genetics, and fertile soils has made it a consistent source of distinctive, expressive lots.

The natural process used here involves drying whole, intact cherries, allowing the fruit's sugars to permeate the bean over weeks.
