COFFEE BACKGROUND

Our longtime sourcing partner Ture Waji founded Sookoo Coffee in 2019. Today, Sookoo is celebrated for offering remarkably clean, consistent, and delicious specialty coffees. Sookoo’s meticulous processes and focus on quality are unparalleled.

Early last year, we visited Ture to experience his work in action. Operating in remote areas of Ethiopia’s Guji zone, Ture travels to multiple kebeles (villages) to collect coffee cherries for processing at Sookoo’s stations. These areas are so incredibly remote that visiting them requires driving hours through the mountainous terrain far from any paved road.

Bumping up and down the mountains during our visit, Ture explained that coffee there was still very young. These trees, only a few years old, grow at incredibly high elevations in nutrient-packed soil — conditions that produce dense and deeply complex cherries. Sookoo naturally processed this offering at their Adamo station, carefully drying the intact cherries to create a cup exploding with fruity flavor.

Context

Produced by Ture Waji, this Adamo selection from the Guji region of Ethiopia showcases the distinct character of the area. As a natural-processed coffee, it reflects the traditional drying techniques often employed in the region, which frequently contribute to a pronounced sweetness and complex fruit profile. When evaluating such coffees, tasters often look for the interplay between deep, dark chocolate undertones and the bright, berry-forward acidity common to high-quality Ethiopian lots.

Sourced by Blueprint Coffee, this offering presents a profile defined by cherry, dark chocolate, floral, and blackberry notes. To better understand how these specific descriptors fit into the broader spectrum of coffee quality and sensory evaluation, you may wish to consult the flavor wheel. By examining the relationship between the origin’s unique terroir and the careful post-harvest handling, one can gain a deeper appreciation for the nuanced cup profile achieved in this particular lot.
