COFFEE BACKGROUND

The micro-region Pântano, where Fazenda Rio Brilhante sits, has well-defined seasons and consistent seasonal rain: ideal conditions for pulped-natural coffees. This process removes the cherries’ skin but leaves most of the mucilage. Drying the beans with this pulp is a middle ground between washed and natural processing. It highlights the coffee’s natural sweetness and produces a lovely aromatic cup. This micro-lot, named Limão Rosa (pink lemon), offers more acidity than typical coffees from Brazil.

Founder Inácio Urban has grown Rio Brilhante to an impressive 1,600 hectares over the last 40 years. The farm is divided into 45 sections, each representative of a unique terroir and micro-climate. In 2006, Inácio’s children joined their father in managing the farm — continuing the family’s work while bringing fresh energy and innovation. In 2020, Rio Brilhante won the Ethics and Traceability Award, honoring the farm’s commitments to their people, to preserving the environment, and to responsible agribusiness.

Context

The Limão Rosa, sourced from Fazenda Rio Brilhante in the Pântano region of Brazil, represents a classic expression of the region’s output. Produced by the team at Blueprint Coffee, this lot utilizes the pulped-natural method, a technique that balances the clean acidity of washed coffees with the sweetness often found in sun-dried beans. To better understand how this specific processing choice influences the final cup, you can explore our processing methods explainer.

In the cup, this coffee presents a profile defined by chocolate, peanuts, malt, and dried fruit. While these descriptors provide a clear starting point, the flavor wheel can be a helpful tool for identifying the nuances within these broader categories. Pulped-natural coffees often bridge the gap between traditional nutty, chocolatey profiles and the more vibrant, fruit-forward characteristics found in fully natural lots, making this a versatile selection for those who appreciate a balanced, structured brew.
