From the roaster

Over the past quarter-century, Brazilian farmers seeking access to the growing specialty coffee market abandoned the traditional natural process in favor of the newer pulp natural process in the name of increased consistency and quality. Recently, we have seen more quality-focused growers returning to the natural process and applying a new focus on quality to produce consistent and tasty results, like this Yellow Bourbon from the Dias Pereira family's award-winning Fazenda Sertão in Carmo de Minas.

Context

Produced by the Dias Pereira family in the Carmo de Minas region, Brazil Fazenda Sertão represents a classic expression of high-quality Brazilian coffee. This lot features the Yellow Bourbon varietal, a plant known for its distinct golden-hued cherries and balanced cup profile. By utilizing a natural process, the producers allow the coffee cherry to dry around the bean, which often imparts a characteristic sweetness and body to the final brew.

Sourced by Intelligentsia Coffee, this selection highlights the unique terroir of Brazil · Carmo de Minas. While natural-processed coffees often lean toward heavier fruit notes and syrupy textures, the specific nuances of this harvest can be explored further using the flavor wheel. As a staple of the region, the work of the Dias Pereira family continues to showcase the potential of traditional varietals when cultivated with careful attention to post-harvest processing.
