Andres Fahsen manages Finca Patzibir, a model organic farm located on the slopes of Lake Atitlán’s breathtaking Volcán Tolimán. Andres has partnered with visionary producer Josue Morales on this project, and the results are spectacular! Patzibir is a Kaqchikel word meaning “where the tzibir tree lives”. The terroir at Finca Patzibir is exquisite for its coffee, intercropped trees—like the native patzibir tree—and vegetation.

Context

Guatemala Finca Patzibir, sourced by Linea Caffe, represents the distinct coffee-growing landscape of the Lake Atitlán region. Produced by Andres Fahsen, this lot showcases a profile defined by bittersweet chocolate, Bing cherry, and mandarin orange. Coffees from this area are often shaped by the unique microclimates surrounding the lake, which can influence the development of sugars and acidity in the bean.

When evaluating such profiles, it is helpful to reference the flavor wheel to better categorize the interplay between the deep, cocoa-toned base notes and the brighter, citrus-forward characteristics. While every harvest varies, the combination of chocolate and stone fruit notes is a hallmark of many high-quality Guatemalan coffees, offering a balanced cup that transitions from a rich, heavy body to a vibrant, fruit-driven finish. This specific offering highlights the meticulous work of the producer in capturing the essence of the Lake Atitlán terroir.
