From the roaster

A VIBRANT YELLOW PACAMARA WITH COMPLEX FRUIT AND CLEAN SWEETNESS.

The Rodriguez family’s coffees have long been part of Madcap’s menu, with our first purchase made through the Cup of Excellence auction in 2009. Their Pacamara offerings have typically brought together red and yellow varieties grown at Finca Nejapa. This selection highlights Yellow Pacamara from a single parcel: the Roma tablón at Finca Nejapa in Apaneca, El Salvador.

Grown at 1,550 meters above sea level, this naturally processed lot went straight to drying after harvest, drying for 20–25 days with no additional fermentation step. The family began offering natural lots for export in 2023, expanding the range of coffees we could explore from their farms.

Selected for Best of 2026, this coffee stood out for its clean expression of the natural process, which brings forward the Yellow Pacamara variety’s complex fruit flavors and sweetness. The cup is expressive, with notes of ruby red grapefruit, melon, and persimmon.

Context

The Natural Pacamara Nejapa, sourced from the Apaneca region of El Salvador, represents a meticulous collaboration with the Rodriguez family. This lot showcases the distinct characteristics of the Pacamara varietal, a hybrid known for its large bean size and complex profile. By utilizing a natural process, the producers allow the coffee cherry to dry intact, which often imparts a heightened sweetness and depth to the final cup. When brewed, this selection from Madcap Coffee Company highlights vibrant notes of ruby red grapefruit, melon, and persimmon. To better understand how these specific descriptors align with broader sensory categories, consult the flavor wheel. While natural-processed coffees often exhibit heavier fruit tones and a syrupy mouthfeel, the specific expression of this Pacamara highlights the unique terroir of the Rodriguez family’s farm at 1550 masl, offering a refined balance between bright acidity and dense, fruit-forward sweetness.
