From the roaster

This is our second release of Fincas del Putushio, a new planting from Jose Jijon. Working together with his father Pepe, they used what they had learned developing Finca El Soledad and adapted it to a high-elevation farm in a different region. Through unique challenges and trials, the effort put forth yields a tremendously clean and elegant cup.

Context

The Ecuador Jose Jijon, sourced by Onyx Coffee Lab, represents a distinct offering from producer Jose Jijon. This coffee is processed using the dry washed method, a technique that balances the clarity often associated with washed coffees with the complexity sometimes found in sun-dried lots. To better understand how different techniques influence the final cup, you can explore our processing methods explainer.

When evaluating a coffee of this origin, it is helpful to consider how specific regional conditions interact with the chosen processing style. As you experience the nuances of this lot, you may find it useful to reference the flavor wheel to identify and categorize the specific aromatic and taste profiles present. While processing methods generally dictate the foundational structure of a coffee—with washed coffees often highlighting acidity and dry-processed coffees leaning toward heavier fruit notes—the dry washed approach offers a unique bridge between these two traditional profiles.
