ROAST: Medium Light

This is a washed Guatemalan microlot from the CODECH cooperative in the Sierra de los Cuchumatanes of Huehuetenango. This is our second year working with producer Agusto López, and we're excited to see his coffee back in the lineup! He grows Bourbon and Caturra varieties on his farm, La Esperanza 2, which sits up in the mountains at about 1,700 meters above sea level. This is a well-structured coffee with sweet black cherry up front and sweet and spicy ginger and panela finishing out a perfectly balanced cup.

Context

Produced by Agusto López in the Huehuetenango region of Guatemala, this lot showcases the classic profile of the Bourbon varietal. As a washed coffee, the processing method emphasizes the inherent clarity and structural acidity of the bean, a technique often utilized to highlight the specific terroir of high-elevation growing environments. You can learn more about how these processing methods influence the final cup profile in our technical guide.

Roasted by Ozo Coffee, this selection presents a nuanced sensory experience characterized by notes of gingersnap, panela, and black cherry. While individual lots vary, these descriptors can be mapped against the flavor wheel to better understand the interplay between the Bourbon varietal’s inherent sweetness and the bright, fruit-forward characteristics often associated with this specific origin. This coffee serves as a refined example of the traditional washed processing standards maintained by producers in the Guatemalan highlands.
