In the San Ignacio province of Cajamarca, Peru is La Prosperidad de Chirinos, a cooperative made up over 800 producer members. Founded in 1968, the people of Chirinos have worked hard to build an organization focused on producing high-quality organic coffees and the betterment of their community. The coffee here is grown with great care at high altitudes in the surrounding mountains, usually with each producer operating on approximately 4-5 hectares. The resulting coffees are diverse and complex, with sweet, nutty flavors balanced by citrus acidity.

Context

Sourced from the San Ignacio Province in the Cajamarca region of Peru, this lot is produced by the cooperative La Prosperidad de Chirinos. Grown at elevations ranging from 1300 to 2000 meters above sea level, the coffee is prepared using the washed process. Generally, washed coffees are celebrated for their ability to highlight the inherent acidity and clean profile of the bean, as the fruit flesh is removed before drying. You can learn more about how different processing methods influence the final cup profile in our guide.
