In 2018, we made our first visit the La Prosperidad de Chirinos, situated in the San Ignacio province of Cajamarca. This year, we are proud to offer this microlot from co-op member Mariano Peña Huertas, who has been a member of the co-op since 1994. Mariano's microlot is a washed single-variety Caturra, produced with care in the mountains of Cajamarca. In the cup, enjoy notes of almond, custard, and a sweet apricot acidity.

Context

Sourced from the San Ignacio Province of Cajamarca, the Peru Mariano Peña Huertas represents the meticulous work of producer Mariano Peña Huertas. This lot features the Caturra varietal, a plant widely recognized for its adaptability and consistent cup quality. Processed using the washed method, the beans are carefully cleaned to highlight their inherent characteristics, resulting in a profile defined by Ozo Coffee as apricot, custard, and almond.

When evaluating such specific flavor profiles, it is helpful to consult the flavor wheel to better identify the nuances between stone fruit acidity and creamy, nutty undertones. While washed coffees are often celebrated for their clean, bright acidity and clarity, the specific terroir of Cajamarca provides a unique backdrop for this harvest. You can explore more offerings from this producer through Ozo Coffee, where the focus remains on highlighting the distinct regional identity of high-altitude Peruvian coffee.
