ROAST: Light

In 2018, we made our first visit the La Prosperidad de Chirinos, situated in the San Ignacio province of Cajamarca. This year, we are proud to offer this microlot from co-op member Miguel Ramírez, who has been growing coffee since 1995 and has played an active role in the Chirinos cooperative for over two decades - both in coffee production and in leadership. The care and skill he puts into his farm is more than evident in the cup. This year's lot is a field blend of geisha, catuai, and catimor varietals that are gently washed, pulped, and then fermented for 16 hours before going into a solar dryer, likely imparting some of that deep sweetness that we’re tasting in this coffee. In the cup, enjoy notes of rich and tangy stone fruit, balanced with toasted almonds and brown sugary goodness.

Context

The Peru Miguel Ramírez, sourced by Ozo Coffee, represents a focused expression of the San Ignacio Province in Cajamarca. Produced by Miguel Ramírez at 1730 masl, this lot utilizes the washed process, a method typically employed to highlight the inherent clarity and acidity of the bean. The selection features the Geisha varietal, which is widely celebrated in the specialty industry for its distinct, tea-like elegance and complex aromatic profile.

In the cup, this coffee presents a balanced interplay of sweetness and nuttiness, characterized by notes of nectarine, brown sugar, and almond. While individual experiences can vary based on brewing parameters, these descriptors align with the broader flavor wheel categories often associated with high-quality washed coffees. By pairing a renowned varietal with meticulous processing, this offering provides a clear window into the specific terroir of the Peruvian highlands.
