From the roaster

Our first Honduran coffee of the season comes freshly arrived from Finca Las Flores, one of several small farms belonging to Roger Domínguez.

This fully washed coffee is more subtle than the naturals Roger produces at Finca San Francisco, but easily as delicious. We taste plump concord grapes, spiced apple cider, graham cracker, milk chocolate, orange zest, and molasses - equally delicious as filter coffee or espresso.

Context

Produced by Roger Domínguez, this Honduras - Las Flores selection represents the meticulous standards maintained by Partners Coffee. The coffee is processed using the washed method, a technique often employed to highlight the inherent clarity and acidity of the bean. While washed coffees are frequently celebrated for their clean, vibrant profiles, this specific lot from the Honduras region offers a complex sensory experience that bridges bright fruit notes with deep, comforting sweetness.

When evaluating the cup, drinkers may find it helpful to reference the flavor wheel to categorize the interplay between the bright orange zest and the richer, base notes of molasses and milk chocolate. The combination of spiced apple cider and graham cracker suggests a balanced, structured body that remains approachable. By focusing on the producer’s specific processing choices, one can better appreciate how the terroir of Las Flores translates into such a distinct and layered final cup.
