From the roaster

Alter Ego is our dark roast. Now, don't expect to see black sweaty beans here. This is a well developed roast that still leaves the beans chocolate brown but brings out warm flavours of dark caramels, baker's chocolates and spices. It's syrupy and round.

The coffee in Alter Ego right now comes from a small group of amazing people in the El Cielito & El Cedral regions of Honduras. You can read more about them below.

Context

Phil & Sebastian Coffee Roasters presents Alter Ego, a coffee sourced from the El Cielito and El Cedral microlots in Honduras' Marcala region. The roaster emphasizes dark caramels, baker's chocolates, and spices—a profile suggesting a fuller-bodied cup with warm, toasted sweetness and subtle aromatic complexity. These flavor characteristics align with the deeper end of the flavor wheel, where chocolate and caramel notes tend to dominate darker roasts.

This coffee reflects the roaster's approach to Honduras' coffee heritage, where microlot precision meets accessible, approachable flavor development. The combination of chocolate and spice notes offers versatility for both espresso and filter applications.
