roasting notes

Wildan’s coffees have long challenged expectations of Indonesian cup profiles, with a processing approach that continues to push beyond convention.

During the roast, we extend development after the initial soak phase, encouraging prolonged caramelisation to maximise sweetness while preserving vibrancy and subtle red fruit notes in the cup. The result is a layered coffee, with notes of cooked rhubarb and black tea on the finish, delivering a balanced and expressive brewing experience.

origin Information

Produced by Wildan Mustofa and his wife, Atieq Mustikaningtyas, at Frinsa Estate, this coffee reflects a long-term focus on quality and traceability. Wildan has led Frinsa for 16 years, with our sourcing relationship spanning over 8 years. Frinsa Estate has developed into a fully integrated operation, with a wet mill, dry mill, and storage facilities all on site. This allows full traceability from harvest through to export, with lots separated by cultivar, field location, and picking date.

Across multiple sites in West Java, Frinsa cultivates a wide range of varieties, including Ateng Super, P88, Borbor, Sigarar Utang, and Lini S-795, alongside ongoing cultivar experimentation and collaboration with local smallholders. Context

Frinsa Estate's 2025/26 lot represents a washed-process expression of the Ateng Super varietal from Weninggalih, West Java, grown at 1400 masl by producers Wildan Mustofa and Atieq Mustikaningtyas. Rosetta Roastery has developed this coffee to emphasize aromatic herbality alongside darker stone fruit and tea-like character—lemongrass and black tea notes paired with cooked rhubarb and red fruit. The cup presents as full-bodied and rich, suggesting the concentrated sweetness and structure typical of carefully managed Indonesian washed coffees.
