ABOUT

El Suspiro is owned by Alejandro Saldaña and his wife, Maria Ligia Mierisch, who is known as “Aunty Maria” and is part of the renowned Mierisch coffee-growing family. One of the unique characteristics of Orange Bourbon is that its cherries ripen to an orange colour, making it more challenging for pickers to identify cherries at their peak ripeness.

An interesting tradition at El Suspiro is that the first harvest of the season often begins on Christmas Day, 25 December. While Maria stays home to celebrate Christmas with their children, Alejandro has to go to work on Christmas day to kick off the harvest.

Originally from El Salvador, Orange Bourbon was brought to Nicaragua by Alejandro and has since become one of the farm’s standout varieties. The variety is known for for its elegant floral aromas and clean fruity flavours. We’re very excited to share this exceptional coffee with everyone.

Context

Sourced from the El Arenal region of Matagalpa, Nicaragua, El Suspiro is a testament to the meticulous cultivation practices of producers Alejandro Saldana and Maria Ligia Mierisch. This lot features the Orange Bourbon varietal, a distinct mutation of the classic Bourbon lineage often noted for its unique sweetness and complexity. Grown at an elevation of 1350-1450 masl, the cherries undergo a washed process, a technique typically employed to highlight a coffee’s inherent acidity and structural clarity.

Roasted by Seven Seeds, this selection presents a profile defined by floral aromatics, bright lime, and a creamy custard finish. While washed coffees are generally celebrated for their clean, transparent cup profiles, the specific nuances of this harvest invite a deeper exploration of its sensory characteristics. To better understand how these specific descriptors align with broader industry standards, we recommend referencing the flavor wheel to identify the subtle interplay between the cherry-like fruit notes and the underlying floral qualities.
