From the roaster

This coffee comes from family-owned farms connected through Cooperativa del Sur del Cauca (COSURCA) in Cauca, Colombia. The cooperative brings together 11 community groups across the region, providing shared access to processing, quality control, and export through its central dry mill and cupping lab.

Beyond coffee, COSURCA supports producers with financing, training, and community programs focused on long-term stability—investing in education, income diversification, and everyday quality of life for farming families.

Anchorhead Coffee

Context

Colombia's Cauca region has established itself as a source for distinct coffees grown at significant elevations in the southwestern highlands. This lot comes from Cooperativa del Sur del Cauca (COSURCA), a producer collective working within that origin, and has been roasted by Anchorhead Coffee. The cooperative model allows smallholder farmers to pool resources and share knowledge, a structure that has become increasingly important in Cauca as producers refine their processing and agricultural methods.

Natural-processed coffees tend to show heavier fruit expression and body compared to washed lots, characteristics worth exploring with the flavor wheel as you taste. This particular coffee's profile reflects both the regional terroir and the producer's chosen fermentation approach.
