Coffee Description

This is our first offering from renowned producer Wilton Benitez of Granja Paraíso 92, known for cultivating rare and difficult coffee varieties, including this Striped Bourbon. A naturally occurring mutation of Red Bourbon, this variety was only recently discovered in the Huila and Cauca regions of southern Colombia and is recognized by its distinctive vibrant orange stripes on the cherries. For this lot, Wilton uses an extended anaerobic fermentation with native yeasts to enhance the coffee’s pronounced fruit-forward flavors.

During a blind tasting with both our Colombia and US cupping teams, this lot was the overwhelming favorite on the table. The cup is bursting with a tart, fruity sweetness and layered notes of tropical passionfruit, green apple, dried currant, delicate rose florals, and a silky, rounded body.
