Coffee Description
This is our first offering from renowned producer Wilton Benitez of Granja Paraíso 92, known for cultivating rare and difficult coffee varieties, including this Striped Bourbon. A naturally occurring mutation of Red Bourbon, this variety was only recently discovered in the Huila and Cauca regions of southern Colombia and is recognized by its distinctive vibrant orange stripes on the cherries. For this lot, Wilton uses an extended anaerobic fermentation with native yeasts to enhance the coffee’s pronounced fruit-forward flavors.
During a blind tasting with both our Colombia and US cupping teams, this lot was the overwhelming favorite on the table. The cup is bursting with a tart, fruity sweetness and layered notes of tropical passionfruit, green apple, dried currant, delicate rose florals, and a silky, rounded body.

Context
Wilton Benitez's Striped Borbón showcases the distinctive character of Cauca's coffees, processed through extended anaerobic fermentation—a technique that intensifies fruit-forward expression. The Striped Borbón varietal, with its genetic complexity, provides a foundation for the complex interplay of stone fruit and floral notes Devoción identifies in the cup. Natural-processed or extended-fermentation coffees typically lean toward heavier fruit expression and wine-like qualities; this lot's combination of passion fruit brightness alongside dried currant depth and subtle rose suggests careful fermentation management. The tasting profile bridges the vibrant and the structured, offering both immediate sensory appeal and layered complexity.
