Our latest offering from award-winning coffee producer Jhoan Vergara is this thermal shock processed gesha. This exotic variety is just one of many Jhoan and his family has planted over the last decade as they shifted their approach from a more traditional coffee plantation model to a focus on high-quality specialty coffees. Jhoan's expertise in postharvest processing techniques is showcased beautifully in this complex cup with a refined flavor profile. 

After fermenting this lot anaerobically for 60 hours, the coffee is washed with cold water to shock the beans and lock in the flavor profile for a more distinguished and lasting flavor profile. Gesha Las Flores starts with a bright citric acidity like pink grapefruit and lemon, a vanilla sweetness, and a unique spiced undertone of cardamom as it cools.
