Context
Produced by Jhoan Vergara in the Huila region of Colombia, this Colombia Las Flores Thermal Shock lot showcases the innovative techniques currently shaping the specialty coffee landscape. The coffee features the Pink Bourbon varietal, which is increasingly recognized for its distinct profile and balance. By utilizing a thermal shock processing method, the producer manipulates temperature to influence fermentation, often resulting in a cup that is notably fruity, spicy, and complex.
While processing methods like thermal shock are designed to highlight specific enzymatic reactions, the final expression of any coffee is deeply tied to its terroir. Enthusiasts looking to better understand the nuances of such profiles may find it helpful to consult a flavor wheel to identify the specific aromatic compounds present. This selection, offered by Equator Coffees, represents a modern approach to traditional Colombian coffee production, emphasizing precision and clarity in every cup.
