This microlot from the expert producers and our friends at El Diviso farm is an ombligón variety, an enigma in the coffee world with its exact genetic origins unknown. First planted in 2019, it is cultivated exclusively in the department of Huila in Colombia. Named for the Spanish word for belly button, due to the resemblance at one end of the cherry, Ombligón plants are extremely productive, resistant to leaf rust and other diseases, and have a unique and complex flavor profile.
El Diviso Ombligón is a washed process coffee with a bright, tea-like body, a sweetness reminiscent of maraschino cherry and candied pineapple, and delicate floral notes of orange blossom.
