Context

The El Diviso Sidra, roasted by 19grams, represents a sophisticated intersection of modern processing and rare genetics. Produced by Nestor Lasso in Colombia, this lot utilizes an anaerobic honey process, a technique that often emphasizes sweetness and complex acidity by controlling oxygen exposure during fermentation. You can learn more about how these processing methods influence the final cup profile in our technical guide.

The coffee features the Sidra varietal, which is increasingly recognized for its unique ability to bridge the gap between high-intensity fruit notes and a structured, elegant body. In this specific roast, the profile highlights notes of apricot, candied ginger, and nougat. When evaluating these distinct characteristics, we recommend referencing the flavor wheel to better identify the nuances of the ginger spice and stone fruit sweetness. This Colombian selection offers a compelling look at how meticulous farm-level intervention can elevate a specific varietal’s inherent potential.
