From the roaster

This is our first year working with producer Jose Rivera. We purchased selected his 100% Tabi varietal lot for its juicy sweetness and ripe fruit tones. Tabi is a relatively new coffee varietal that is obtained by crossing Typica, Bourbon and Timor Hybrid varietals. The result is a hearty, disease resistant, tall tree with long branches and high quality cup characteristics.

This coffee is incredibly sweet, juicy and clean with notes of strawberry, grape jolly rancher and apple. Some caramel and red apple tones arise as the cup cools, and the body is medium and balanced.

We roast and ship on Monday, Wednesday, and Friday. All orders placed before 10AM ship that day.

Context

Produced by Jose Rivera in Colombia, this offering from Case Coffee Roasters showcases the unique profile of the Tabi varietal. Tabi, a hybrid developed by Cenicafé, is often noted for its resilience and complex cup profile, which can range from bright acidity to deep sweetness. In this specific lot, the cup presents a vibrant array of fruit-forward characteristics, including strawberry, red apple, and grape jolly rancher, balanced by a grounding note of caramel.

When exploring such distinct flavor profiles, it can be helpful to reference a flavor wheel to better identify and categorize the nuances found in your brew. While every harvest is unique, coffees from this region are frequently celebrated for their diversity and depth. This selection highlights the meticulous work of Jose Rivera and the distinct character that the Tabi varietal can contribute to a well-developed roast.
