Coffee Details

The Guji zone is a world-renowned coffee-growing area of southern Ethiopia. We are partial to coffees from this area, due to the amazing juiciness, complexity and chocolatey notes.

It is home to the Oromo people, many who have lived here for dozens of generations. In addition to growing coffee, farmers plant other cash crops, raise cattle and keep bees for honey. The rich, fertile soil and forested terrain, complete with tall shade trees, makes the area ideal for growing  top-notch coffee. After the Mulish washing station was established in 2014, farmers in the area no longer had to make long, arduous trips to distant washing stations. The Mulish team also helped establish the first school in the area.

Context

Sourced from the Ethiopia · Guji region, this Ethiopia Mulish selection is processed at the Mulish washing station. As a washed coffee, it undergoes a meticulous processing method that typically emphasizes the inherent clarity and acidity of the bean, allowing the specific terroir of the Guji zone to shine through. Case Coffee Roasters highlights a profile defined by strawberry candy, juicy cantaloupe, and milk chocolate.

When evaluating such distinct flavor profiles, it is helpful to reference a flavor wheel to better categorize the interplay between the bright, fruit-forward notes and the underlying sweetness. While washed coffees are often celebrated for their clean, tea-like elegance, the specific characteristics of this lot offer a vibrant, candy-like sweetness that balances the traditional profile of the region. This offering serves as a compelling example of how careful post-harvest handling can elevate the nuanced qualities found in high-quality Ethiopian harvests.
