Ingredients and Method: 

We source exceptional coffee from La Plata in Colombia, who break from industry norms and strives for sustainability by decaffeinating their coffee in-country, with local, natural sugar cane. With notes of dark chocolate and caramel, this coffee is the perfect foundation for our decaf coffee liqueur.

We don’t cold brew our coffee, but instead use an innovative flash-brewing technique. First we brew the coffee with hot water, then we flash-chill it to extract and lock in the flavours and delicate aromas that you’d expect from fresh espresso.

Next, we mix the coffee with our bespoke blend of aged rum from Guyana, unaged rum from the Caribbean, and add Madagascan vanilla and Costa Rican cacao to accentuate and complement the flavours of the coffee.

You’ll find layers of flavour and complexity which highlight the true coffee flavour, without being overly sweet.

While decaffeinated coffees are often processed to remove stimulants while preserving the integrity of the bean, they frequently retain the foundational profiles associated with their origin. In this specific expression, the roaster identifies prominent notes of dark chocolate and caramel, flavors that are commonly found in the flavor wheel when describing South American coffees.

Generally, coffees from the Huila department are celebrated for their balanced acidity and sweetness, which provide a versatile base for both brewed coffee and specialty applications like liqueurs. By utilizing beans from La Plata, this liqueur leverages the classic, dessert-like qualities inherent to the region, resulting in a profile that emphasizes depth and richness rather than bright, acidic fruit tones.
