This washed Pink Bourbon from producer Maricela Joven Penagos arrives from Huila's elevations in Colombia, where the region's climate and soil foster distinctive fruit-forward profiles. Da Matteo has roasted this lot to emphasize bright, stone-fruit character—plum and citrus acidity frame the cup, while subtle tea-like qualities add complexity. The washed processing method typically highlights a coffee's inherent sweetness and clarity, and these notes reflect that approach: crisp lime zest and green tea notes suggest a lighter touch that preserves the bean's origin character rather than developing heavier roast flavors.
