From the roaster

250 grams of whole roasted coffee beans.

This coffee comes from the Gogogu washing station in the Kofee district of Guji, Ethiopia — a region where coffee has been grown for generations. Guji's coffee is grown at high altitudes in rich red highland soil, giving it a distinct profile.

Over 700 smallholder farmers, each tending around 2 hectares, deliver ripe coffee cherries from within 5km of the mill. Cherries are depulped same-day, fermented 8–12 hours, washed, then dried on raised beds for 5–15 days.

Context

Sourced from the Guji region of Ethiopia, this lot from Da Matteo showcases the refined profile typical of high-elevation Ethiopian production. The coffee is composed of Heirloom varietals, a term used to describe the diverse, indigenous coffee plants native to the region’s forests. By utilizing a washed processing method, the roaster highlights the inherent clarity and brightness of the bean, resulting in a cup defined by sweet, nectarine, and lemon zest notes.

Washed coffees are generally celebrated for their ability to emphasize acidity and clean, vibrant flavor profiles, often allowing the specific terroir of the Guji region to shine through without the influence of fruit-forward fermentation. For those looking to further explore the nuances of these tasting notes, the flavor wheel serves as a helpful tool for identifying the delicate citrus and stone fruit characteristics present in this selection.
