Alberto Calderon manages the 10-hectare La Esmeralda farm, nestled in the village of La Estrella at an elevation of 1440 metres above sea level. The farm is home to 40,000 Caturron and Castillo coffee trees. As a second-generation coffee producer, Alberto acquired his own farm three decades ago. He is a member of Cuatro Vientos, a family-owned business, offering microlots and regional blends.

After being handpicked, their cherries are floated and then fermented in plastic bags or tanks. Their coffee is traditionally dried on ‘marquesinas’, mechanical dryers, or patios.

Da Matteo

Context

This anaerobic natural-processed coffee from Da Matteo showcases the Caturron varietal grown by Alberto Calderon in La Estrella, Colombia. Natural-processed coffees tend to develop heavier fruit character and body compared to washed lots, and this lot exemplifies that tendency with its prominent raspberry and Bosc pear notes alongside creamy sweetness and toffee. The anaerobic fermentation approach—detailed in our processing methods guide—creates conditions for distinctive flavor development during the drying phase, contributing to the coffee's layered profile. Grown at 1440 masl in the Huila region, this lot balances brightness with textural richness.
