Strawberry syrup, Blueberry, Blackberry juice

We are back with another delicious natural Ethiopian! The Anasora farm is a semi-forest with several indigenous trees and spice crops mixed in. The station was built to source exclusivelly red cherries from the highland area resulting in a very intentional coffee. This coffee is fruit-forward and juicy! It will be great nomatter how you brew it but if you really want to draw out the fruit we'd recommend a V60 or Chemex.   We hope you enjoy this one!

Context

The Anasora Natural, sourced from the Anasora Farm Site in the Guji region of Ethiopia, represents a classic expression of the Heirloom varietal. Cultivated at 2300 masl, this lot is processed using the natural method, a technique where the coffee cherry remains intact during drying. Generally, natural-processed coffees are known for their potential to develop intense sweetness and heavy fruit profiles, as the bean absorbs sugars directly from the drying fruit.

Roasted by East Pole Coffee, this specific selection highlights a vibrant profile characterized by notes of strawberry syrup, blueberry, and blackberry juice. When evaluating such distinct fruit-forward profiles, enthusiasts often consult a flavor wheel to better identify and categorize these complex sensory experiences. By focusing on the unique terroir of Guji and the careful handling of the natural process, this coffee offers a clear look at the high-quality potential of Ethiopian heirloom crops.
