Nestled in the misty highlands of Herrera, Tolima, Colombia, Newerley Gutierrez’s Java honey‑processed coffee is a vibrant showcase of technique and terroir.

After harvest, cherries undergo 24 hours of oxidation, followed by 48 hours of submerged fermentation in cherry pulp, and a final 24 hours of post‑pulp fermentation in plastic tanks - each stage intensifying sweetness and complexity. 

Dried on raised beds at 1700 meters above sea level, the beans emerge with a pronounced heavy body, and the cup delivers rich, incredibly sweet flavours of  panela, pineapple and peach - with vivid yellow‑fruit notes lingering on the palate. Medium citrus acidity balances the deep, slightly pulpy texture, creating a smooth, rounded experience. Newerley, a fifth‑generation farmer and certified Q‑Grader, melds traditional family wisdom with precise processing to craft a coffee that feels both rooted and refined.
