From the roaster

We don’t typically feature this many process-driven coffees, but with three releases from Rafael Aya this year, the clarity and structure of this Colombia F6 made it impossible to pass up. Grown at 1,750 meters at La Virginia, a six-hectare farm Rafael has managed since 2018, this lot benefits from high-altitude conditions, deep valleys, and a distinct microclimate that slow cherry maturation and enhance complexity.

Pushing fermentation to its limits, Rafael applies an extended 250-hour natural fermentation, unlocking a depth of flavor before 15 days of careful drying in Guardiola. The result is a vibrant, layered profile with notes of jasmine, red apple and quava.

This coffee stands out not just for its process but for its remarkable clarity and balance, an expression of Rafael’s expertise and innovation.

Context

Produced by Rafael Aya, this Colombia La Virginia – Espresso lot represents the meticulous work of a dedicated producer. Roasted by Five Elephant, this coffee is processed using the natural method, a technique where the coffee cherry remains intact while drying, often allowing the bean to absorb more of the fruit’s inherent sugars. While natural-processed coffees often exhibit heavier fruit profiles and increased sweetness, this specific selection from Colombia highlights a distinct profile of jasmine, red apple, and guava.

When evaluating such complex profiles, it is helpful to reference the flavor wheel to better identify the nuances between floral aromatics and orchard fruit acidity. Grown at 1750 masl, this coffee showcases the potential of high-elevation cultivation in the region. By focusing on the interplay between the natural processing and the specific terroir of the farm, this espresso offers a vibrant, fruit-forward experience that remains balanced and refined in the cup.
