The name ‘Kurinji’ comes from a flower native to the Shevaroy Hills that blossoms only once every 12 years. Riverdale Estate has been a family farm for over a century, a proud heritage carried on by brothers Prakashan & Mohan. Prakashan and Mohan Balaraman took over their family farm in 2005 and redeveloped it from the ground up to accommodate the growing appetite for specialty coffee in India. Situated high in the Shevaroy Hills of the Eastern Ghats of Tamil Nadu. Natural spring water flows through the estate and is surrounded by a forest reserve rich in biodiversity and wildlife, with Indian bison (gaur), monkeys and peacocks living in the forest. This aerobic natural was fermented for 72 hours to achieve a vibrant boozy sweetness with notes of cranberry, papaya & tropical fruits.

Context
Produced by Prakashan and Mohan Balaraman in the Shevaroy Hills of India, the Kurinji Aerobic Natural represents a distinct approach to regional coffee production. This lot is offered by Five Senses and features a profile defined by notes of cranberry, papaya, and tropical fruits. The aerobic natural process involves exposing the coffee cherries to oxygen during fermentation, a technique that can significantly influence the final cup profile by encouraging specific microbial activity.
While traditional processing methods often emphasize the inherent characteristics of the bean, aerobic fermentation is frequently used to amplify fruit-forward acidity and sweetness. To better understand how these techniques impact the sensory experience, you can explore our processing methods explainer.
