From the birthplace of coffee comes a complex, juicy and vibrant washed from Gedeb county. This specific lot is made up of cherries grown by approximately 150 smallholder farmers from Saareji village, cultivated at high altitudes and delivering this beautifully vibrant, juicy and complex washed coffee. Ripe handpicked cherries are delivered to the nearby Worka washing station, which is owned and operated by the quality focused Melkalati Trading PLC. Cherries are pulped using an ‘Agard’ coffee processing machine and then soaked in water for 48hrs as part of the wet fermentation process. This quality focused approach promotes celebration of the history and character of these coffees, along with the  skilled and dedicated smallholders responsible for growing them.

Context

Sourced from the Gedeb region of Ethiopia, this Saareji lot is brought to market by Melkalati Trading PLC. As a washed coffee, it undergoes a meticulous processing method designed to strip away the fruit pulp before drying, a technique often favored for highlighting the inherent acidity and clean, vibrant profiles characteristic of the region. Roasted by Five Senses, the cup presents a bright, fruit-forward experience defined by notes of apricot, sweet pineapple, and lemon-lime zest.

When evaluating such profiles, it is helpful to consult a flavor wheel to better identify the nuances between stone fruit and citrus acidity. While washed coffees are generally celebrated for their clarity and crisp finish, the specific terroir of Gedeb often contributes a distinct complexity that distinguishes these beans from other Ethiopian origins. This selection offers a refined look at how careful processing can elevate the bright, zesty qualities of high-quality regional harvests.
