This natural process coffee from the Sidama Coffee Farmers Cooperative Union shines bright.

From the roaster
The Sidama Coffee Farmers Cooperative Union (SCFCU) has been an institution in southern Ethiopia for over 20 years. Since its founding in 2001, SCFCU has grown to represent 80,000 individual farmers across over 50 primary cooperative societies making it the second largest coffee cooperative union in the country. As an umbrella coop, SCFCU provides marketing, financing and technical support services to members. Over 95% of their annual production is washed process, although, as you’ll discover with this lot, their natural process coffee shines bright.

Context
The Ethiopia SCFCU Natural, roasted by Gimme! Coffee, represents a classic expression of the Sidama region. Produced by the Sidama Coffee Farmers Cooperative Union, this lot utilizes the natural processing method, a technique where the coffee cherry is dried intact around the bean. Generally, natural-processed coffees are known for their heavier body and pronounced fruit-forward characteristics, often displaying deep sweetness and complex acidity.
When evaluating a coffee of this profile, it is helpful to reference the flavor wheel to identify the specific nuances that emerge from the interaction between the Sidama terroir and the drying process. By allowing the bean to absorb the sugars from the fruit during the extended drying period, this coffee highlights the traditional craftsmanship of Ethiopian cooperatives. This selection offers a distinct look at how regional agricultural practices and careful post-harvest handling shape the final cup profile for the consumer.
