Context

Produced by Juan Martín in the Cauca region of Colombia, this lot showcases the potential of the Castillo varietal when paired with modern processing techniques. Intelligentsia Coffee highlights this specific selection for its distinct profile of berry and dark fruit. While Castillo is widely recognized for its resilience and productivity, its flavor profile can be significantly influenced by post-harvest handling.

In this instance, the coffee undergoes anaerobic fermentation, a method that often intensifies the body and complexity of the cup. Coffees subjected to controlled anaerobic environments frequently exhibit heightened acidity and deep, fruit-forward characteristics that deviate from traditional washed profiles. To better understand how these specific processing choices influence the final cup, you can explore the flavor wheel or review the broader impact of processing methods on the sensory experience of specialty coffee.
